Origin
This Brazilian coffee is a natural Arabica grown in the Cerrado area, west of São Paulo, in a small town called Montecarmelo. Situated at 700 meters altitude, in an arid climate with dry, sandy soils, this sandy terrain yields a smaller harvest but produces coffee of excellent quality. Precipitation is rare. The coffee plants grow and mature healthily, benefiting from perfect drying conditions, resulting in beans of splendid appearance.
In Trieste, an opto-electronic sorting process is performed on a consistently homogeneous batch, achieving perfect roasting behavior. The Santos beans are harvested at various stages of maturity. The resorting process takes place in Trieste. In the homologation room, a light of a special frequency is shone on the bean. Through this polarization system, the reflection of this light is measured by a computer program which determines whether to accept or reject the bean based on its maturity. Beans that are rejected are set aside using compressed air.
Taste
The flavor is commensurate with its origin. The aroma is distinct, with hints of fresh nuts, honey, and cocoa. Clean, simple, and clear in taste, the coffee is exceptional for a Santos, with a full texture and low acidity. It is sweet and has chocolatey undertones.
Serving
When prepared as espresso, milk further develops the cocoa nuances, becoming flattering and delicate.
It is also the first choice for other preparation methods: cafetière, moka pot, and French press.
