Origin
On the island of Timor, in the Indonesian archipelago northwest of Australia, a coffee with unique characteristics is cultivated, which has made history in the old Viennese "coffee houses."
Coffee has been grown there since 1815, initially under Portuguese colonial rule, and from 1975 under Indonesian administration.
Almost completely destroyed during the independence movement turmoil at the beginning of the last millennium, structures for producing small quantities of high-quality coffee varieties have been intensely promoted again in recent years.
Family farms, averaging 2 hectares, grow coffee in extreme climatic conditions with semi-annual dry periods, at altitudes of 1000 - 1600 meters on heavily sedimented soils due to the climatic conditions.
The harvest occurs selectively during the picking process. Preparation is by wash-fermentation with fine manual sorting.
Taste
Timor Arabica Prime Quality is an Arabica with a slightly elongated shape, with the lowest caffeine content (1.26%). In the cup, it is fragrant, mildly acidic; it stimulates the contrast between delicate sweetness and intense aroma.
Serving
In the espresso preparation, a creamy foam stands out. The cup presents fragrant structures with subtle notes of roasted hazelnuts and cocoa. In a cappuccino, the addition of milk introduces a creamy caramel flavor.
