Grown in the southern Western Ghats, an ancient mountain range older than the Himalayas with significant geomorphic features, unique biophysical and ecological processes, and a forest ecosystem that influences the Indian monsoon weather pattern, this coffee, exemplary in aroma and scent for coffees from this region, initiates the classification of special gourmet coffee.

The requirements for this coffee are:

• Sustainably managed shaded plantations at altitudes over 1200 meters
• Selective manual harvesting
• Controlled washing and fermentation process during critical timing with pre-sorting
• Sun drying and curing for 30 days in wooden silos
• Using two manual sorting checks, defects are reduced to 5 errors per 300 grams, sensorially irrelevant.

This results in pure, defect-free coffee, available only in small quantities.

Taste

The taste is remarkably fine, with a subtle yet deep acidity, characterized by a long-lasting aftertaste. The aroma emits a harmonious and intense scent, with distinct tones of wild mint and fresh herbs.

Serving

As an espresso, it is complex, like a mystery that is hard to decipher. Adding milk diversifies the flavor palette. When brewed as filter coffee, it optimally highlights the spicy components.
